Buckwheat blooms with bright white flowers that attract many bees and butterflies. Buckwheat is an excellent, fast-growing green manure because it fixes nitrogen in the soil. For that reason, buckwheat is sown to occupy the land after a crop has been harvested. At the end of the season, the buckwheat is dug over, putting the organic matter in the soil. Both the plants and seeds are not hardy.
